German Chocolate Coconut Cookies



I always seem to start out the week with dessert :)



Making crowd-pleasing cookies does not always have to be a huge production.  This recipe calls for 5 basic ingredients, costing about $4 total for 30 cookies.  Which is really okay, in my book.

Ingredients:
-1 box German chocolate cake mix
-2-3 cups shredded coconut (found in baking aisle)
-2 eggs
-1/2 cup milk
-2 tbsp oil



1.  Put cake mix in large mixing bowl.
2.  Crack in the 2 eggs.



3.  Add milk and oil.  Mix well.
4.  Fold in the coconut.  Best way to fold is to take a rubber spatula and cut across the middle of the batter, scoop and flip.  Turn bowl 90 degrees and repeat.  And turn 90 degrees and repeat again.  Do this a few times until it's well-mixed but not overly so.



5.  Scoop onto well-sprayed cookie sheets with big spoon.
6.  Bake 350F for 12-13 minutes.



Yum!  Because these cookies are baked with cake batter, they have a fluff and moistness to them that is rarely found in cookies these days, esp anything you'd buy at the store.


And the texture is really wonderful...I am not a fan of coconut at all, but you don't really taste that in these cookies, which is good.  It just adds that chew to it.  You know?



My friends seemed to enjoy it very much, at least :)  A lot of you guys reading this got to eat them :)
