Pancake Recipe

Nothing beats pancakes made from scratch. Here's my absolute favorite recipe.

2 cups flour
1 tbsp baking powder
a pinch of salt
(sift the 3 ingredients above)
1 tsp vanilla extract
2 eggs (separate)
1 cup milk
6 tbsp sugar
1 tbsp vege oil

  1. In mixing bowl, add egg whites. Foam. Add sugar and mix.
  2. Add egg yolk to mixture, mix well. Then add dry mixes, milk and oil.
  3. Pan fry, eat. :)

Potato Salad

Fantastic as a side, or a dish to pass at a potluck.

  • 3 or 4 mid sized Russet potatoes
  • 4 Tbsp juice from Kosher dill pickles
  • 3 Tbsp finely chopped dill pickles
  • 1/4 cup chopped parsley
  • 1/2 cup chopped red onion
  • 2 stalks celery, chopped
  • 1 or 2 chopped scallions
  • 1 - 2 hard boiled eggs, chopped (optional)
  • 1/2 cup mayonnaise
  • 2 teaspoons dijon mustard
  • Kosher salt and freshly ground black pepper to taste
  1. Bring a pot of water to boil. Add the potatoes (skins on). Simmer for 20 minutes. Remove from pot. Let cool enough to handle, but still warm. Remove skins. Cut potatoes into inch sized cubes.
  2. Put potatoes in to a large bowl. Add the juice from the Kosher dill pickles. Add the finely chopped pickles themselves. Add parsley, onions, celery, scallions and (optional) hard boiled egg.
  3. In a separate small bowl, mix mayonnaise with mustard. Add salt and pepper to taste. Mix in the dressing with the potato mixture. Again, salt and pepper to taste.

Cheese Sticks

Strange recipe. I made it using provologne, just cuz we always have tons of those. The funny thing about this is that my dad, who never eats any snack EVER, gobbled all of these up in a split second. So it's gotta be good, yeah?

4 slices cheese
1/2 cup milk
2 cup flour
2 tsp baking powder
1/4 cup sugar
1 stick butter
1 egg
a dash of salt

  1. Sift flour, baking powder, and salt. Set aside.
  2. Melt cheese in a small saucepan of milk - low heat.
  3. In a bowl, mix softened butter and sugar. Add pre-beaten eggs little by little.
  4. Add the cheesey milk to butter/sugar/egg mixture. Add flour mix to make a dough.
  5. On greased pan, squeeze out dough with cake decorating pouch or a sandwich bag with a small hole.
  6. Bake 15 minutes, 350F.
