Butternut Squash Bread

Research Question: You can make zucchini bread, you can make pumpkin bread.  Can you take this funny little squash and turn him into bread as well?


AAAAAAbsolutely!  And it is delicious!



Ingredients (makes a loaf and 12 muffins):
-1 medium butternut squash
-3 1/2 cups flour
-1 cup sugar
-1 tsp baking powder
-2 tsp baking soda
-1 cup plain nonfat yogurt
-2 eggs
-1 cup water
-1 tsp each of salt, cloves, cinnamon, and nutmeg

Butternut Squash Prep
1.  Wash and cut the top off the butternut squash.  Then cut in half. 

 
 

Take a spoon and scoop out the insides!  Save them :)

 


Okay, then quarter the squash.  Look, it makes a heart, awwww.  

 

Then cut it into eighths.

 


2.  Take a knife and cut along the flesh of the squash and peel to remove the peel.



3.  Chop peeled squash into small cubes (less than an inch).



4.  Prepare a large pot of lukewarm water.  Salt it generously.  Drop the squash cubes in the water and bring water and squash to boil.



5.  Boil for 20 minutes or until squash is soft and mashable. 




6.  Drain and mash into a nice pulp.  Set aside.

And now the bread!
(Preheat oven to 350F)

1.  Combine flour, sugar, baking powder, and baking soda.  Add all the spices too.



Stir 'em around!



2.  Add yogurt, eggs, and water. 



It smells great already.




3.  Add mashed butternut squash.  Yum!



4.  Pour into loaf pan and greased muffin pan. 





5.  Bake muffins for 35 minutes.  Bake loaf for 1 hour or until toothpick comes out clean.



Hehe how cute are these little snackies.  And the bread is great for breakfast.



And!  And and and!  Not only can you make bread out of butternut squash, but you can also roast up the seeds like pumpkin seeds!  Dare i say that these were actually better?!



I was actually super impressed with how the bread came out.  Butternut squash is close enough to pumpkin that there's not a huge difference, but I really like how the texture and flavor of butternut squash bread turned out.  And now I have a load of yummy breads to eat as snacks throughout the week.  Score!

  2. oh wow, no oil! i'll have to try this out. p.s. i didn't make the beer bread this weekend :( i keep getting these free loaves of bread from papa joe's that i need to eat. once i stop getting the free (ok, free with any purchase) bread, i will be baking, for sure.

  3. I am slobbering all over myself just thinking about it. Time to make a grocery list and put butternut squash at the top! Thanks again, as usual, for an exciting new recipe I would never think to try if it weren't for you.

    Does Drew know how blessed he is?! If I were a guy, I'd want you as a wife too. Yummmmmm. I'll have to settle for dear-friend-who-passes-along-her-recipes. :)

  4. i am baking it as we speak. i altered the recipe a tad- i used 2 cups whole wheat flour, 1 cup wheat bran and 1/4 cup wheat germ and 1/4 cup flaax seed. i am a health nut and so i figured it might work. i also used pumpkin pie spice mix- didn't have the cloves and cinnamon so i figured why not!

    it smells yummy. hope it turns out okay!
