Applesauce Oatmeal Raisin Muffins


My friends were over at my place last weekend for a study date, and I made these simple, yet yummy muffins to keep our brains functioning and our energy going.  They took 5 minutes to prepare, then i just popped them in the oven while we worked. 

Ingredients (12 muffins):

-1 cup oats
-1 cup milk
-1 cup flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1/2 cup brown sugar
-1/2 cup applesauce
-1 egg
-1/4 cup golden raisins


1.  Preheat oven to 375F. 

2.  Mix oats and milk.  Yum!



3.  In a large bowl, mix flour, baking powder, baking soda and brown sugar.  I didn't have brown sugar this time though, so i just used white.


4.  Stir in oat and milk mixture...


Now the applesauce...


And the egg too.  No picture here, oh well.

5.  Check out the yummy golden raisins!  Fold em in.


6.  Pour batter into 12 lined muffin cups.

7.  Bake for 30 minutes.


When you're done, you get a lovely, healthy snack for about 100 calories each.  There's no oil or butter in the recipe, but the applesauce (of which i use unsweetened) keeps the muffins deliciously moist.  See, check out the inside!


They taste even more fantastic in the morning, i think :)


You can store these in the fridge and eat em cold, or microwave them for about 30 seconds and they'll taste like they did coming out of the oven!
