Chocolate Cake Cookies


Best of both worlds.  A cookie that is as fluffy as a cake, but has the standalone feature of a cookie.  Perfect for passing around at meetings, class, etc.


And boy, if you are craving chocolate, this will definitely take care of that.  But it's so light and fluffy, you don't get that horrible feeling of a dense, heavy, greasy cookie. 

Ingredients:
-2 cups flour
-1 1/4 tsp baking soda
-1/2 tsp salt
-1 cup brown sugar
-1/4 cup butter
-3/4 cup plain yogurt
-2 eggs
-1/2 cup cocoa powder

1.  In small mixing bowl, combine flour, cocoa, baking soda, and salt.  Set aside.


2.  In large mixing bowl, combine butter and sugar first.


3.  Add yogurt and egg.

4.  Now add the dry mix to the wet mix.

 
  
 5.  Spoon dough into balls and balls on a nicely greased (use the spray) cookie sheet. 


It helps to use 2 spoons of the same size to scoop with one and push off the spoon with the other.


 
 

6.  Bake for 8 minutes.  Allow to cool (or don't) before serving :)


Mmm, check these babies out!


They're so light and fluffy and wonderful!!  They go great with coffee in the morning.

 
They also taste fantastic really cold.  Stick a few in the freezer, and they taste like the cookie part of an ice cream sandwich. :)

  3. Sunny - does it matter if you use low-fat yogurt or whole milk yogurt or even fat free? Since it's baking, I guess it probably matters, and I didn't know which one you used. These look great!

  4. oh, i always use fat free yogurt...it probably wouldn't make a huge difference by taste, but the calories differ, so i go with the fat free-est variety :)
