Roasted Potato Cubes


Here is a simple side you can easily make with very few ingredients and prep time.  I made these over the weekend to go with the big steaks we were having.  

Ingredients (4 side servings):
-4 medium potatoes
-1 tbsp salt
-1 tbsp pepper
-2 tsp paprika
-1 tbsp garlic powder
-3 tbsp olive oil

1.  Preheat oven to 425F.


Scrub the potatoes.


2.  Cut into slabs, then cut them into small cubes.






3.  Put potatoes into a mixing bowl and dust them with all the spices.  Add olive oil and toss.  Literally.  Woohoo!


4.  Cover a large cookie sheet with foil, and spread potatoes on it so there's not a lot of overlap.


5.  Bake for 20 minutes.  Give it a little stir with a spatula or spoon, and bake for 10 more minutes.


6.  Remove from oven and serve!


Easy!  Delicious and simple, this side is great for picky eaters :)
