Quick Quesadillas
Sometimes, two rice cakes are just not enough to make a midday snack. These quick quesadillas take 2 minutes to make, and one is just 160 calories. You can make two for dinner, or make a whole bunch and cut them into wedges as an appetizer.
The first time I made quesadillas on a George Foreman, i was at Tree's house for dinner. I still remember the garlic potatoes we made, and the ooey-gooey brownies for dessert. I miss Tree a lot.
Since there are only two ingredients, i'm not gonna insult you by writing out the recipe. I'll let the pictures do most of the talking.
First, you take a low carb whole wheat tortilla. This is the brand I use. I normally find them in the refrigerated section of the grocery store. They are just 70 calories apiece.
Heat up your GF or griddle, and lay the tortilla right on top.
Take 1/3 cup of reduced fat fiesta blend cheese. You can use pretty much whatever cheese you want, but i like the nice blend of white n' yellow cheeses in the fiesta mix.
Put cheese in one half of the tortilla.
Fold over and smush down the top of the GF.
After about 2 minutes, you should hear the GF sizzling because the cheese is melting and oozing out of the tortilla. Let it. It just creates an awesome slightly-burned cheese crust around the edges that taste like a bite of Cheese Heaven.
Mmm sizzle sizzle!
Remove from heat. Now you can one of two things. Shove it in your mouth quickly. That's one. Or you can top it with salsa and or slices of jalapeno peppers.
Oh happy day! I even snipped some green onions on top. Delicious! The spicier my life, the better :)
Oh, I lied, there's a third option. You can also cut them into wedges to share with friends. Pfft. But who does that?
