5-Ingredient Casserole

This time of year is ridiculously busy for most of us, especially students.  I read all these cookbooks, and though the meals look immaculate, i know i have no time to make that.  I need a meal that I can prepare in 10 minutes and last me all week. 

I'm going to show you the world's easiest casserole that even an engineer can make it.  (BAM, roasted)

No, even better.  My 18-year-old can't-properly-crack-an-egg-into-a-bowl little brother could make it.  (BAM, roasted). 

It takes 5 simple ingredients that are easy to find, cheap to buy, and can be stored in your pantry for weeks--nay, months--until you're ready to make this.  It takes 10 minutes to prep (8 of which is boiling pasta).  Also, it is actually healthy for you. 

Ingredients:
-2/3 bag of egg noodles (no yolk kind is best)
-1 cup mushrooms, chopped
-1 can black beans
-2 cups frozen or canned peas
-2/3 jar of pasta sauce

1.  Boil the noodles, then add to a glass casserole pan.

2.  Top with chopped mushrooms.



3.  Rinse and drain a can of black beans.  Spread over top of the mushrooms.



4.  Add peas.



5.  Pour sauce.



6.  Cover with foil and bake at 375F for 20-25 minutes.

Makes 5-6 servings of less than 300 calories.  This can work as lunch for the entire rest of the work-week.  You get a nice balanced meal all in one.  It's low fat, low cholesterol (no meat or dairy!), and tastes great reheated. 

It's that time of year.  Don't give up on cooking just because you get busy or stressed.
