Pulled Pork
For Fourth of July, we decided to make these scrumptious slow cooked pulled pork sandwiches. I love that there are so few ingredients and so little prep time that goes into this delicious meal.
Ingredients (8-10 servings):
-3-4 lbs pork shoulder
-1 1/2 cups water
-1 bottle BBQ sauce
-1 large onion, sliced into rings
1. Slice onion into rings (or half circles). Place half the onions at the bottom of your slow cooker.
2. Unwrap pork shoulder. Rinse in cold running water, then gently place in the slow cooker.
3. Pour water over the top. Add the rest of the onions.
4. Cover and cook on low for 9 hours. If you have an Auto Shift feature on your slow cooker, you can set it to that and cook for 8 hours.

5. Remove onions from the top of the pork and set aside.
Discard the water from the slow cooker, and put the pork on a tray. I used my pyrex 13x9 pan because it's fork-scratch resistant.
6. Using a knife and fork, remove any skin, fat globules, or other such unpleasant parts from the pork. I cannot show you a picture of this, because my hands were otherwise occupied, and it's not pretty.
7. Then, when you are left with just the tender meat, shred them with two forks.
8. Put shredded pork and onions back in the slow cooker. Now, get your barbecue sauce ready. Here's the kind I got.
Drizzle the top of the pork with barbecue sauce...
Mix with a big spoon.
And let cook on high for 1-2 hours! And then. And then. The magic.
First, toast some buns. I used whole wheat to preserve some semblance of health. To no avail.

We made delicious sweet corn as a side. What a perfect meal to celebrate Independence Day! It's also a great meal for big get-togethers with family and friends during the summer.
