Pizza Recipe

I swear by this recipe...it's gotta be on of my favorites :) Especially because this is the first meal drew and i made together (i think).

  • 1/2 cup milk
  • 3/4 cup hot water (120-130 degrees)
  • 1 packet yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3 cups all purpose flour
  1. in large bowl combine milk & hot water
  2. add yeast, sugar, and salt and stir
  3. wait until mixture begins to froth, about 3-5 mins
  4. add 2 and a half cups flour to the mixture
  5. stir until soft dough forms
  6. sprinkle remaining dough onto counter
  7. turn and knead dough on the counter w/ flour for about 10 minutes, working inmore flour or as much is needed to make the dough smooth and elastic.
  8. place in greased storage bag and refrigerate at least 1 hour or overnight.

AFTER dough rises

  1. preheat oven to about 375F degrees
  2. lightly grease 2 cookie sheets. sprinkle with cornmeal, if desired.
  3. punch down dough and divide into 2 equal parts.
  4. roll each part of rough evenly onto cookie sheets.
  5. add sauce and cheese with toppings (pizza sauce preferred, but any pasta sauce will do. use shredded mozzarella -- you can also mix in parmesean)
  6. for garlic crust, sprinkle garlic powder on the edges of the crust.
  7. bake 12-14 minutes or until crust is lightly browned and cheese is bubbly.

Beer Bread

Here's the easiest loaf of bread you'll ever make. The beer gives it a deep yeast flavor. If you like, add your favorite herbs or seeds such as sesame, millet, etc., or even a bit of shredded cheese.
  • 3 cups self-rising flour*
  • 3 tablespoons sugar
  • 1 (12-ounce) can of beer
  1. Preheat oven to 375F (190C).
  2. Lightly grease or spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray.
  3. Combine all ingredients, mixing well.
  4. Pour into prepared loaf pan and bake for 1 hour.

Makes 1 loaf.
*Or you may substitute with 3 cups all purpose flour, 3 teaspoons baking powder and 1 1/2 teaspoons salt.

Blueberry Buckle

I made this for a potluck at work, and it was a huge hit! Really great for the summer months. I would imagine it would work just as well with other berries.

Cake ingredients:

  • 2 cups and 1-2 Tbsp of sifted, all purpose flour separated
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 pint blueberries

Topping ingredients:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/3 cup sifted all purpose flour
  • 1/2 teaspoon cinnamon
  1. Preheat the oven to 375°F. Grease an 8-inch springform pan. Set aside.
  2. Sift together the 2 cups of flour, the baking powder and the salt. Set aside. Cream the butter and sugar until fluffy, about 3 minutes. Beat in the egg. Add the flour mixtrue in 3 parts, alternating with the milk. Toss the beries with the remaining 1 to 2 tablespoons of flour (to separate and scatter evenly throughout the batter) and fold in. Pour batter into the prepared pan. Set aside.
  3. Combine ingredients for topping with a fork to make crumbly mixture. Sprinkle this over the batter.
  4. Bake for one hour, then test for doneness by gently inserting a fork. If it does not come out clean, give the cake another 5 to 10 minutes to bake.
  5. When the cake has cooled, run a knife around the edges and lift the cake out o the pan. Serve with whipped cream.

So i was thinking about what to do with this blog, since i have 2 other public ones and 2 private ones. i think i'm gonna use this blog to post recipes. yes, it sounds strange, but i like having recipes ready for me when i need it, and what better place to put something where you can [almost] always get to it than the internet!
