Olive and Feta Polenta

Cute, little squares of olive and feta polenta, each just 40 calories.


This is one of the new loves of my life.  It's the easiest little things to make, and they are just so ridiculously delicious.  Perfect snack or side.
You ready for this?

Take it away, Ern!  Yahhhhh take it away!

Ingredients:
1/2 cup quick grits
1 1/2 cup water
1 tsp chicken powder
10 pimento-stuffed olives
1/2 cup crumbled feta cheese


Okay, so first, these are the grits I used. 




1.  First, soak the grits in 1/2 a cup of water.


2.  Chop your 10 olives.  Yup, that's all it takes, I kid you not.  (Plus, any more than that and the sodium will kill ya)


3.  Bring 1 cup of water to boil, then add the quick grits.  LOWER you heat.  Cover and stir once in a while.  After a couple of minutes, it should start looking like this. 


4.  Remove from heat.  Pour/scrape polenta into a square baking dish.


5.  Add olives!


6.  Now add the feta!

 

7.  Stir it around with your spatula until all is well mixed, then spread out evenly across baking dish.  Press it with your fingers if you have to, especially around the edges.  The point is to pack it down nice and good.

 

8.  Leave it out for a while, then refrigerate for 30 minutes or so until it's cool/cold.

9.  Preheat oven to 375F.

10.  Dump out the polenta (you might have to coax the edges a bit with your rubber spatula) onto a cutting board.


11.  Cut into 16 squares (that's 4 by 4, for liberal arts majors) (just kidding) (seriously, i was just kidding) (please don't go)


12.  Bake on a small wire rack (i used the one from my toaster oven) for 7 minutes, then flip over and bake the other side for 7 minutes.

7 minutes, and you're in HEAVEN.


Look at these tender morsels of deliciousness and yum and rrrrrrrrr.


They're just crispy on the edges, and soft and mealy (um, like grits) on the inside.  You'll notice one whole square is missing, and then half of another.  Hmm...what happened there? 


The southerners will hate me, but there is NO BUTTER in this recipe.


This is such a wonderful and easy way to make polenta!  You can make it plain without any of the olives or feta too!  Serve them as appetizers at your next study party :)  They will be a crowd pleaser for sure!
